Our craft

Slow is the whole recipe

Industrial bread rises in two hours. Ours takes two days — and you can taste every one of those hours.

  • Stone-milled flour — milled in-house weekly from seven heritage grains.
  • Natural levain only — our starter is older than most of our bakers.
  • Wood-fired hearth — oak-fired to 1,900°F for that blistered crust.
